Ingredients
2 c cooked lentils
1 cn Black Beans (drained)
1 onion
2 Garlic Cloves
1 t Minced Ginger
1 Mixed Vegetables
1 pn Curry Spices
1 pn cumin
1 Corriander
1 pn Tumeric
1 pn sea salt
2 sweet potatoes
1 Almond or Rice Milk
1 Butter or Coconut Oil
Directions
Saute onion, garlic and ginger in olive oil, then add cooked lentils, vegetables and beans, seasoning with the curry spices to taste. (left over roasted vegetables can be used, or alternatively vegetable soup ,ix powder with some water). Bake the sweet potatoes until tender, and mash with the butter or coconut oil, adding almond milk until creamy. Season with salt and curry powder.
Spread the lentil mixture in the bottom of a 9×9 pan and cover with the mashed potatoes, bake at 350 for 30 mins, turning the oven to broil for the final 5 minutes to brown the top. Let sit before serving.
