Tofu Sandwich Spread

This combination of ingredients promotes breath health and is a good source of protein.

Keeps refrigerated for 1 week.


1/2 lb tofu
2 tsp tahini
sliced green onions (to taste)
1/2 c grated carrot (optional)
1/2 red pepper, finely chopped (optional)
3 shiitake mushrooms, sliced (optional)
1/2 tsp turmeric powder water
1 tsp olive oil
2 clv garlic (optional)
1/2 tsp tamari or Bragg’s liquid aminos
1 tsp lemon juice (fresh)
1 tsp rosemary (fresh)


Gently saute the mushrooms, garlic and turmeric in a little water and olive oil. In a bowl, mash the tofu with the tahini using a fork or potato masher. Add lemon juice and tamari or Braggs. Mix the mushroom mixture, carrot and red pepper in with the tofu. Chop the rosemary and stir it in. Use in sandwich making, or on crackers. Serve with broccoli or red clover sprouts.
