Ingredients
1/3 c almond butter
2 bananas (ripe)
1 t vanilla
3 T soy milk ((use more if needed for consistency) )
2 1/2 c oatmeal (quick cooking or rolled)
2 T freshly ground flaxseed
1 t cinnamon
1/4 c flour
2 T maple syrup or 3/4 cup chopped dates (optional)
Directions
In a large bowl, mash bananas with a fork until smooth. Add almond butter, soy milk, vanilla and maple syrup (optional) and mix well. Add remaining ingredients and stir until well combined. Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done. Note: This recipe is only truly sugar-free if you used unsweetened almond butter and unsweetened soymilk and avoid the maple syrup, so read the ingredients list and look for soy milk that says unsweetened right on the label.
