Lentil Burgers

Ingredients

2 tbsp extra virgin olive oil
2 clv garlic, finely chopped
1 onion, chopped
1 celery stalk, chopped
1 tsp dulse powder
2 carrots, finely chopped
1 c green lentils
4 tbsp spelt flour
1/2 tsp ground ginger
1/2 tsp cumin
1/2 tsp turmeric powder

Directions

Preheat oven to 350. Gently saute the garlic, onion, celery and carrots in water and olive oil in a large pot until they soften slightly. Add the lentils, water, and dulse powder and simmer for about an hour until the lentils are soft and the liquid is absorbed.
Add 2 tbsp of the flour, and the spices and mix well, cooking for 2 more minutes. Let the mixture cool until it is not too hot to handle. Form patties of the mixture, about ½” thick. Coat each patty with some of the remaining flour. It will make about 18 patties. Oil a baking tray and place the patties on the tray. Grill for 15 minutes on one side, then flip them and grill for 10 more minutes. Serve with Lemon-Tahini Dressing and broccoli or red clover sprouts.
