There’s no cream in sight but it tastes so rich and well, “creamy”! In fact, it is so good that you won’t believe how packed full of essential cancer fighting phytochemicals this soup is… the phytoestrogenic soy, the allyl sulfide laden garlic and the ton of indole-3-carbinol and isothiocyanates provided by the Brassica family vegetables – too good to be true!
Ingredients
1 pk soft tofu
3 medium potatoes (diced)
2 c broccoli
2 c Brussel sprouts
2 c cauliflower
1 c kale (chopped)
2 c leeks (chopped)
1 clv garlic (minced)
2 tbsp tamari or Bragg’s liquid aminos
1/2 tsp white pepper
Directions
Boil the potatoes until tender.
Steam tofu, broccoli, kale, sprouts, leeks, and garlic, preserving the liquid.
Blend all ingredients with the Braggs and pepper until a creamy soup is formed.
