4 Sandwich Rolls (Split)
1 cn Black Beans (Rinsed / Drained)
1/4 c Mild Salsa
7 oz Corn (Drained)
2/3 c Italian Seasoned Dry Breadcrumbs
3 tbsp fresh cilantro (Chopped)
Reserve 1/2 cup beans. In bowl, mash remaing beans with the salsa, using a fork. Stir in corn, 1/2 cup breadcrumbs, fresh cilantro and reserved beans. Shape into 4 (aprox 1/2″) patties; coat with remaining breadcrumbs. In non-stick skillet, heat 2Tbs. oil over medium heat. Add patties and cook, turning once, until heated through, aprox 4 – 5 mins each side. Serve on rolls, with optional, if desired, lettuce, tomatoes, additional salsa.
